In early May 2016, an American start-up called Ripple Foods launched the vegan milk substitute made from yellow peas under the name “Ripple Milk”. In Germany, the pea drink is now being offered by Drinkstar GmbH under the name “Princess and the Pea”.

The technology for making pea milk is different from that for making other nut milk alternatives. First the proteins are extracted from the peas and then mixed with water. Vegetable oil, vitamins, minerals, various thickeners and flavors are added to industrially produced pea milk.

ingredients:

• 225 g yellow peeler peas
• 1 liter of water + water for soaking and boiling
• 2 tbsp sunflower oil (or another vegetable oil)
• 2 Medjool dates (pitted)
• 1 pinch of salt
• 1 tsp vanilla extract

Why is vegetable oil added? The oil serves as a natural emulsifier and prevents the milk from quickly separating. For this reason, many manufacturers of this milk alternative also use rapeseed oil or algae oil in their products.

preparation:

1. Soak the peeler in 750 ml of cold water overnight (about 8-12 hours).
2. Drain the next day and rinse with clear water.
3. Put the soaked peas in a saucepan with 750 ml of water and cook for 30-45 minutes until the lentils are soft.
4. Drain the cooked peas through a sieve and let them cool.
5. Put the peas in a blender along with 875 ml of fresh water, sunflower oil, vanilla extract and a pinch of salt. Add the dates and puree for 30 seconds until a homogeneous mass is obtained.
6. Now filter the pea milk through a nut milk bag.

The finished pea milk stays in the refrigerator for about 4-5 days if stored in an airtight container. If you sterilize the bottle beforehand, you may be able to extend the shelf life a little.
