Sweet potatoes, also known as sweet potatoes, are confusingly similar to potatoes. They are also prepared similarly. But actually they have nothing in common. Because the potatoes belong to the nightshade family and the sweet potatoes – to the bindweed family. The last ones contain three times as much sugar and starch, but they are approved for diabetics. This is because after consuming sweet potato the human body produces insulin much more slowly than when consuming potatoes and fruits. They are also real vitamin bombs. Among other things, they contain vitamins from group B, but they are also rich in trace elements. For the recipe for sweet potato ice cream, you not only need sweet potatoes, but also other ingredients. These include healthy fats such as coconut milk and peanut butter, fruits such as bananas and berries, and date syrup or agave syrup is used for sweetening.

Ingredients for 4 servings:

  • 400 g sweet potatoes
  • 400 ml coconut milk
  • 150 ml optional soy milk
  • 1 pinch of organic Bourbon vanilla, ground
  • For sweetening: 80 ml maple syrup
  • 2 bananas, ripe and medium-sized

Preparation:

1. Peel and dice the sweet potatoes. Put water in a saucepan and bring to a boil. Add the sweet potatoes and cook until soft. Then take the pot off the stove, drain the water and let the sweet potatoes cool down completely.

2. Put the cooled sweet potato cubes in a container with a lid, dice the bananas and add. Process the whole thing with the hand blender to a smooth mass.

3. Then add the coconut milk, rice syrup, maple syrup and Bourbon vanilla and puree until creamy. Close the container or cover it with cling film and place in the freezer. Over the next 4 hours, take the ice cream out of the freezer eight times and stir with the hand blender. Then chill overnight. Take out of the freezer just before serving and enjoy defrosted.

  • 400 g sweet potatoes
  • 400 ml coconut milk
  • 150 ml Reissirup

  • 1 ripe banana, diced
  • 1 handful of berries of your choice
  • White chocolate flakes (on request)

Preparation:

1. Line a baking sheet with parchment paper, wash, peel and dice the sweet potatoes. Set the oven to 180 degrees Celsius with convection. Place the cubes on the baking paper and put in the oven. The next morning, add the frozen potatoes and bananas together with the coconut milk, rice syrup and mango pieces to the Thermomix and puree for about 25 seconds at level 10.
  3. Decorate the ice cream with coconut blossom sugar and serve immediately after preparation.
